Cranberry Orange Scones

  • Author: Isabella
  • Total Time: approximately 39 minutes

Ingredients

Scale

For the Scones

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp fresh orange zest
  • 1/2 cup cold unsalted butter, cut into small cubes
  • 2/3 cup dried cranberries
  • 1 large egg
  • 1/2 cup heavy cream
  • 2 tbsp fresh orange juice
  • 1 tsp vanilla extract
  • Additional heavy cream, for brushing the tops

For the Orange Glaze 🍊

  • 1 cup powdered sugar
  • 2 tbsp fresh orange juice
  • 1 tsp fresh orange zest
  • 1/2 tsp vanilla extract

Instructions

Step 1: Preheat the Oven

Preheat the oven to 400Β°F (200Β°C).

Line a baking sheet with parchment paper.

Starting with a fully preheated oven is important because the high initial heat helps the scones rise while the cold butter melts.

Step 2: Combine the Dry Ingredients

In a large mixing bowl, whisk together:

  • All-purpose flour
  • Granulated sugar
  • Baking powder
  • Salt
  • Fresh orange zest

Whisk until the orange zest is evenly distributed throughout the flour mixture.

Step 3: Cut in the Cold Butter

Add the cold cubed butter to the flour mixture.

Using a pastry cutter, two forks, or your fingertips, quickly work the butter into the flour.

Stop when the mixture resembles coarse crumbs with some pea-size pieces of butter still visible.

Don’t try to make the mixture completely uniform.

Those visible pieces of butter are exactly what help create flaky pockets in the baked scones.

Step 4: Add the Cranberries

Stir in the dried cranberries.

Distribute them evenly throughout the flour and butter mixture before adding the wet ingredients.

This helps prevent excessive mixing later.

Step 5: Combine the Wet Ingredients

In a separate small bowl or measuring cup, whisk together:

  • 1 large egg
  • 1/2 cup heavy cream
  • 2 tablespoons fresh orange juice
  • 1 teaspoon vanilla extract

Whisk until smooth and evenly combined.

Step 6: Make the Scone Dough

Pour the wet mixture into the dry ingredients.

Using a fork or spatula, gently mix until a shaggy dough begins to form.

Avoid vigorous stirring.

The dough does not need to look completely smooth.

If a few dry-looking areas remain, they can be incorporated during the gentle folding step.

Step 7: Gently Fold the Dough

Turn the dough onto a lightly floured work surface.

Gently bring it together with your hands.

Fold the dough over itself approximately 2 to 3 times.

This helps create additional flaky layers without requiring traditional kneading.

Avoid repeatedly kneading or compressing the dough.

Step 8: Shape the Dough

Shape the dough into a round approximately 1 inch thick.

Try to keep the thickness relatively even so all the scones bake at a similar rate.

Step 9: Cut Into Wedges

Using a sharp knife or bench scraper, cut the round into 8 wedges.

Transfer the wedges to the prepared baking sheet, leaving a little space between them.

Step 10: Chill if Necessary

If the dough still feels cold and firm, you can proceed directly to baking.

If the butter has softened noticeably while shaping, refrigerate the scones for approximately 10 to 15 minutes.

This helps firm the butter before the scones enter the oven.

Step 11: Brush With Heavy Cream

Lightly brush the top of each scone with a little heavy cream.

This encourages attractive golden browning while keeping the surface tender.

Step 12: Bake

Bake at 400Β°F (200Β°C) for approximately 17 to 21 minutes.

The scones are ready when they have risen, the tops are lightly golden, and the edges look baked through.

Avoid overbaking, which can dry out the centers.

Step 13: Cool

Remove the baking sheet from the oven.

Allow the scones to cool for approximately 10 minutes before glazing.

If they’re extremely hot when the glaze is added, most of it will melt and run off.
