  • 0.33 cup Pure Pineapple Juice

  • 3 tbsp Dark Brown Sugar
  • 2 large Garlic Cloves, minced
  • 1 tbsp Freshly Grated Ginger
  • 1 tsp Toasted Sesame Oil
  • 4 pieces Fresh Pineapple Rings
  • Cooked White Rice
  • 2 tbsp Sliced Green Onions
  • 1 tsp Sesame Seeds

Instructions

  1. Prepare the Marinade: In a mixing bowl, whisk together the teriyaki sauce, pineapple juice, soy sauce, dark brown sugar, minced garlic, grated ginger, and sesame oil.
  2. Marinate the Chicken: Place the chicken pieces in the bowl, ensuring they are fully coated in the marinade. Cover and refrigerate for at least 2 hours or overnight.
  3. Preheat Grill: Fire up that grill or put your grill pan on medium-high heat.
  4. Grill the Chicken: Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F.
  5. Grill Pineapple Rings: Add the pineapple rings to the grill in the last few minutes of cooking, grilling until caramelized.
  6. Assemble the Stack: On a base of cooked white rice, place the grilled chicken, followed by the grilled pineapple rings, and sprinkle with sliced green onions and sesame seeds.

Notes
