Stuffed Roasted Sweet Potatoes with Spinach and Ricotta

Description

Delicious roasted sweet potatoes filled with a creamy spinach and ricotta mixture, a perfect healthy comfort food.


Ingredients

  • 4 medium sweet potatoes
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, chopped
  • 1/2 cup grated cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh herbs (such as parsley or basil) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the sweet potatoes with a fork.
  3. Place them on a baking sheet and bake for about 45 minutes or until soft.
  4. Heat the olive oil in a pan over medium heat.
  5. Add the chopped spinach and cook until wilted.
  6. Mix the ricotta cheese, grated cheese, salt, and pepper with the sautéed spinach in a bowl.
  7. Remove the sweet potatoes from the oven and let them cool slightly.
  8. Cut them in half lengthwise and scoop out some flesh to make room for the filling.
  9. Fill each sweet potato half with the spinach-ricotta mixture.
  10. Return the stuffed potatoes to the oven and bake for an additional 10–15 minutes.
  11. Drizzle with fresh herbs before serving.

Notes

You can prepare the filling a day in advance. Store it in the fridge for easier meal prep.
