Delicious roasted sweet potatoes filled with a creamy spinach and ricotta mixture, a perfect healthy comfort food.

- 4 medium sweet potatoes
- 1 cup ricotta cheese
- 2 cups fresh spinach, chopped
- 1/2 cup grated cheese
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh herbs (such as parsley or basil) for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and poke holes in the sweet potatoes with a fork.
- Place them on a baking sheet and bake for about 45 minutes or until soft.
- Heat the olive oil in a pan over medium heat.
- Add the chopped spinach and cook until wilted.
- Mix the ricotta cheese, grated cheese, salt, and pepper with the sautéed spinach in a bowl.
- Remove the sweet potatoes from the oven and let them cool slightly.
- Cut them in half lengthwise and scoop out some flesh to make room for the filling.
- Fill each sweet potato half with the spinach-ricotta mixture.
- Return the stuffed potatoes to the oven and bake for an additional 10–15 minutes.
- Drizzle with fresh herbs before serving.
Notes
You can prepare the filling a day in advance. Store it in the fridge for easier meal prep.
