- 4 large bell peppers
- 1 pound ground beef
- 1 cup cooked rice
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- Cook the ground beef in a skillet over medium heat until browned.
- Stir in the cooked rice, diced tomatoes, garlic powder, onion powder, cumin, salt, and pepper.
- Stuff each bell pepper with the beef mixture.
- Place the stuffed peppers upright in a baking dish.
- Top each pepper with shredded cheese.
- Bake for 25-30 minutes until the peppers are tender and cheese is golden brown.
- Serve warm and enjoy!
Notes
You can prepare the stuffing a day in advance. Use an air fryer for quicker cooking if short on time.
