- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp oregano
- 1/2 cup soy sauce
- 1/2 cup honey
- 1/4 cup rice vinegar
- 3 cloves garlic, minced
- 2 tbsp sriracha
- 2 tsp sesame oil
- 1 tsp ground ginger
- 2 tsp arrowroot powder mixed with 2 tbsp water
- 1/2 cup mayo
- 1 tbsp sriracha
- 2–3 tbsp water
- 2 cups uncooked rice
- 2 small heads broccoli, chopped
- Sesame seeds for topping
Instructions
- Prepare the Rice: Start by cooking your rice according to package instructions.
- Cook the Chicken: Heat olive oil in a skillet, season chicken, and sear until golden brown (4-5 minutes).
- Make the Sticky Sauce: Whisk together sauce ingredients, pour over chicken, and thicken with arrowroot mixture.
- Steam the Broccoli: Steam broccoli until vibrant green and tender-crisp (about 4-5 minutes).
- Prepare the Spicy Mayo: Combine mayo, sriracha, and water to reach desired consistency.
- Assemble the Bowls: Serve rice topped with chicken, broccoli, spicy mayo, and sprinkle with sesame seeds.
Notes
Feel free to swap out vegetables or use chicken thighs for richer flavor. Marinate chicken for deeper flavor.
