  • Salt and pepper to taste
  • 1 avocado
  • 1 tablespoon lime juice
  • 1/4 cup Greek yogurt or sour cream (optional)

Instructions

  1. Mash the black beans in a large bowl until mostly smooth, leaving some lumps for texture.
  2. Stir in the breadcrumbs, corn, chopped cilantro, cumin, chili powder, garlic powder, and a generous pinch of salt and pepper to create a well-integrated mixture.
  3. Form the mixture into patties, about the size of your burger buns.
  4. Heat a non-stick skillet over medium heat and carefully place the patties in the pan.
  5. Cook for about 5-6 minutes on each side until they develop a crispy, golden-brown crust.
  6. Blend the avocado with lime juice and Greek yogurt (if using) in a small bowl until smooth and creamy.
