- 1/2 cup corn (canned or frozen)
- 1/4 cup cilantro, chopped
- 1 tablespoon cumin
- 1 tablespoon chili powder

- Salt and pepper to taste
- 1 avocado
- 1 tablespoon lime juice
- 1/4 cup Greek yogurt or sour cream (optional)
- Burger buns
- Lettuce and tomato for serving
Instructions
- Mash the black beans in a large bowl until mostly smooth, leaving some lumps for texture.
- Stir in the breadcrumbs, corn, chopped cilantro, cumin, chili powder, garlic powder, and a generous pinch of salt and pepper to create a well-integrated mixture.
- Form the mixture into patties, about the size of your burger buns.
- Heat a non-stick skillet over medium heat and carefully place the patties in the pan.
- Cook for about 5-6 minutes on each side until they develop a crispy, golden-brown crust.
- Blend the avocado with lime juice and Greek yogurt (if using) in a small bowl until smooth and creamy.
- Assemble your burgers with a patty on a bun, topped with the avocado cream, crisp lettuce, and slices of ripe tomato.
