Ingredients

  • 4 tablespoons olive oil or melted ghee
  • 1/4 cup Greek yogurt
  • 1 1/2 cups chopped baby spinach
  • 1 tablespoon chopped dill
  • 1 tablespoon chopped scallions
  • Salt and pepper, to taste
  • 4 oz crumbled feta cheese
  • 1/3 cup shredded mozzarella
  • 1 cup self-rising flour

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the beaten egg, olive oil (or ghee), and Greek yogurt in a mixing bowl and whisk until smooth.
  3. Add the chopped spinach, dill, scallions, salt, and pepper and stir well.
  4. Fold in the crumbled feta and shredded mozzarella until evenly distributed.
  5. Gradually add the self-rising flour, mixing until a cohesive dough forms.
  6. Drop spoonfuls of the mixture onto a parchment-lined baking sheet, spacing them apart.
  7. Bake for 15-20 minutes, or until golden brown.
  8. Cool slightly on the baking sheet before transferring to a wire rack.

Notes

For a quicker cooking method, use an air fryer set to 350°F for about 10-12 minutes.
