- 4 tablespoons olive oil or melted ghee
- 1/4 cup Greek yogurt
- 1 1/2 cups chopped baby spinach
- 1 tablespoon chopped dill
- 1 tablespoon chopped scallions
- Salt and pepper, to taste
- 4 oz crumbled feta cheese
- 1/3 cup shredded mozzarella
- 1 cup self-rising flour
Instructions
- Preheat the oven to 375°F (190°C).
- Combine the beaten egg, olive oil (or ghee), and Greek yogurt in a mixing bowl and whisk until smooth.
- Add the chopped spinach, dill, scallions, salt, and pepper and stir well.
- Fold in the crumbled feta and shredded mozzarella until evenly distributed.
- Gradually add the self-rising flour, mixing until a cohesive dough forms.
- Drop spoonfuls of the mixture onto a parchment-lined baking sheet, spacing them apart.
- Bake for 15-20 minutes, or until golden brown.
- Cool slightly on the baking sheet before transferring to a wire rack.
Notes
For a quicker cooking method, use an air fryer set to 350°F for about 10-12 minutes.
