Delight in these soft and chewy cookies bursting with the flavors of pistachio and creamy white chocolate.


Ingredients

  • 1 cup pistachio pudding mix
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pistachios
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
  3. Add the pistachio pudding mix and mix well until fully blended.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Stir in the chopped pistachios and white chocolate chips.
  7. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Refrigerate dough up to 24 hours for enhanced flavor. Can also be made in an air fryer for quicker results.
