- 1 cup pistachio pudding mix
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped pistachios
- 1 cup white chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the butter, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
- Add the pistachio pudding mix and mix well until fully blended.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Stir in the chopped pistachios and white chocolate chips.
- Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Refrigerate dough up to 24 hours for enhanced flavor. Can also be made in an air fryer for quicker results.
