Description

Ingredients

  • 1 avocado
  • 100 g smoked salmon
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 2 slices of toasted bread
  • Fresh dill (optional)

Instructions

  1. Bring a pot of water to a gentle simmer. Add a splash of vinegar if desired.
  2. Crack the eggs into small cups, one at a time, and gently slide them into the simmering water. Poach for about 3-4 minutes.
  3. Mash the avocado in a bowl, incorporating lemon juice, salt, and pepper until creamy.
  4. Toast the slices of bread until golden-brown.
  5. Spread the mashed avocado over the toasted bread, layer on the smoked salmon, then place the poached eggs on top.
  6. Garnish with fresh dill if using, and serve immediately.
