- 2 eggs
- 1 avocado
- 100 g smoked salmon
- 1 teaspoon lemon juice
- Salt and pepper to taste
- 2 slices of toasted bread
- Fresh dill (optional)
Instructions
- Bring a pot of water to a gentle simmer. Add a splash of vinegar if desired.
- Crack the eggs into small cups, one at a time, and gently slide them into the simmering water. Poach for about 3-4 minutes.
- Mash the avocado in a bowl, incorporating lemon juice, salt, and pepper until creamy.
- Toast the slices of bread until golden-brown.
- Spread the mashed avocado over the toasted bread, layer on the smoked salmon, then place the poached eggs on top.
- Garnish with fresh dill if using, and serve immediately.
Notes
Store leftovers in the refrigerator, keeping avocado and salmon separate to prevent browning.
