- 20 Samoa cookies
- 1/4 cup melted butter
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup shredded coconut
- 1/2 cup caramel sauce
Instructions
- Prepare the crust by pulsing Samoa cookies in a food processor until they resemble fine crumbs. Combine with melted butter and press into a greased springform pan.
- Make the cheesecake filling: In a bowl, beat cream cheese until smooth. Gradually add sugar, then mix in vanilla and eggs one at a time.
- Combine shredded coconut and a few tablespoons of caramel sauce; fold into cheesecake mixture.
- Fill the crust with the cheesecake mixture and smooth the top.
- Bake at 325°F (160°C) for 50-60 minutes until edges are set; center should jiggle slightly. Let cool in oven for 1 hour.
- Chill in the refrigerator for at least 4 hours or overnight.
- Drizzle with caramel sauce and sprinkle with reserved coconut before serving.
Notes
For best flavor, prepare a day ahead. Can substitute with thin mint cookies if necessary.
