Ingredients

  • 20 Samoa cookies
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup shredded coconut
  • 1/2 cup caramel sauce

Instructions

  1. Prepare the crust by pulsing Samoa cookies in a food processor until they resemble fine crumbs. Combine with melted butter and press into a greased springform pan.
  2. Make the cheesecake filling: In a bowl, beat cream cheese until smooth. Gradually add sugar, then mix in vanilla and eggs one at a time.
  3. Combine shredded coconut and a few tablespoons of caramel sauce; fold into cheesecake mixture.
  4. Fill the crust with the cheesecake mixture and smooth the top.
  5. Bake at 325°F (160°C) for 50-60 minutes until edges are set; center should jiggle slightly. Let cool in oven for 1 hour.
  6. Chill in the refrigerator for at least 4 hours or overnight.
  7. Drizzle with caramel sauce and sprinkle with reserved coconut before serving.
