A tropical treat featuring succulent pineapple rings soaked in dark and coconut rums, then fried to golden perfection.

- 8 pineapple rings
- 1 cup dark rum
- 1 cup coconut rum
- 1 ½ cups all-purpose flour
- 10 oz sweetened coconut flakes
- 2 large eggs
- ½ cup coconut milk
- Vegetable oil for frying
- 4 oz cream cheese
- ½ cup powdered sugar
Instructions
- Soak the pineapple: Place the pineapple rings in a bowl and pour in the dark and coconut rums. Let them soak for at least one hour.
- Prepare your station: Drain the pineapple rings and pat them dry. Set up three shallow bowls with flour, egg mixture, and coconut flakes.
- Coat the rings: Dip each soaked pineapple ring in the flour, then the egg mixture, and finally coat it with coconut flakes.
- Heat the oil: In a deep pot, heat vegetable oil to 350°F (175°C).
- Fry the rings: Place a few coated rings into the hot oil and fry for about one minute on each side until golden brown.
- Drain and serve: Remove fried rings and drain on paper towels.
- Make the dipping sauce: Combine cream cheese, powdered sugar, and rum in a bowl; whip until smooth.
Notes
Make-ahead: Soak pineapple rings a day in advance. Store in refrigerator.
