- Zest of 2 limes
- Juice of 2 limes
- 1/2 cup shredded coconut
- Pinch of salt
Instructions
- Combine ingredients: In a large mixing bowl, whisk together the chia seeds, coconut milk, honey or maple syrup, lime zest, lime juice, shredded coconut, and salt until the mixture is smooth and well incorporated.
- Avoid clumps: Let the mixture sit for about 10 minutes, then stir again to break up any clumps.
- Prepare the dish: Pour the mixture into your lined 9×9 inch baking dish and spread it evenly with a spatula for uniform thickness.
- Chill to perfection: Place the dish in the refrigerator and allow it to set for at least 120-180 minutes, or until firm and sliceable.
- Slice and enjoy: Once the bars have set, carefully lift them out of the dish using the parchment paper and cut them into squares or bars.
