Instructions
- Preheat the oven to 350°F (175°C).
- Prepare your baking pan: Grease a 9×13 inch baking pan and line it with parchment paper.
- Combine dry ingredients: Whisk together flour, cocoa powder, baking soda, and salt in a mixing bowl.
- Mix wet ingredients: Blend sugar with vegetable oil, then add eggs one at a time, buttermilk, and vanilla extract.
- Add red food coloring to the wet mixture, stirring well.
- Combine mixtures by gradually adding dry ingredients into the wet mixture, stirring until just combined.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Cool the cake in the pan for 10 minutes before transferring to a cooling rack.
- Prepare the frosting by beating cream cheese, butter, powdered sugar, and vanilla until smooth.
- Frost the cooled cake with the cream cheese frosting, letting it cascade over the edges.

This cake can be baked in advance; frost just before serving for optimal texture. Can also be made gluten-free with appropriate flour substitutes.
