Description

Ingredients

  • 1 cup almond flour
  • 1¾ cups powdered sugar
  • 3 large egg whites
  • ¼ cup granulated sugar
  • 1 tablespoon cocoa powder
  • 1 teaspoon red food coloring
  • ½ teaspoon vanilla extract
  • ½ cup unsalted butter, softened
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Sift together the almond flour, powdered sugar, and cocoa powder into a mixing bowl.
  3. Beat the egg whites until frothy, gradually add the granulated sugar and whisk until stiff peaks form.
  4. Fold the dry ingredients into the egg whites using a silicone spatula, adding the red food coloring and vanilla extract.
  5. Transfer the batter to a piping bag fitted with a round tip and pipe circles onto the prepared baking sheet.
  6. Allow them to sit for about 30 minutes to form a skin.
  7. Bake the macarons for 15-20 minutes until they easily lift off the parchment.
  8. Beat the softened butter and cream cheese until smooth, then mix in the powdered sugar and vanilla extract.
  9. Pipe a generous amount of cream cheese filling onto the bottom of one macaron shell and gently sandwich with another.
  10. Let them rest for at least an hour before enjoying.

Notes

The macarons taste better the day after making. Store them in an airtight container in the refrigerator for up to 5 days or freeze for up to a month.
