- 1 cup pistachios
- 1/2 cup sugar
- 1 cup heavy cream
- 1 packet gelatin (or vegetarian alternative like agar-agar)
- 1/2 cup milk
- 2 cups sour cherries (fresh or frozen)
- 1/4 cup water
- 1/4 cup glucose
- 1/2 cup sweetened condensed milk
- Optional: cocoa powder for mirror glaze
- Flour, butter, and eggs (as needed for a sponge base)
Instructions
- Prepare the Pistachio Mousse: Blend pistachios, sugar, and heavy cream in a blender until smooth.
- Soak the Gelatin: In a small bowl, soak gelatin in cold water for about 5 minutes, then warm milk in a saucepan and dissolve the gelatin in it.
- Combine Mixtures: Fold the milk-gelatin mixture into the pistachio blend and gently mix in whipped cream.
- Mold and Freeze: Spoon the mousse into dome molds and freeze for about 4 hours.
- Cook the Sour Cherry Filling: Cook sour cherries with sugar and water over medium heat for 10-15 minutes until thickened.
- Create an Indentation: Make a space in the centers of the frozen domes and fill with sour cherry mixture, then freeze again for 1 hour.
- Make the Mirror Glaze: Combine water, glucose, and sweetened condensed milk in a saucepan and add dissolved gelatin once boiling.
- Glaze the Domes: Pour the glaze over the frozen domes and let it set while still in the mold.
- Serve: Remove from molds and thaw slightly before serving.
Notes
Prepare these domes a few days in advance; they freeze well. Allow to thaw in the refrigerator for best results.
