Description
Deliciously soft and fluffy cinnamon rolls filled with roasted pistachios and drizzled with a sweet honey glaze, perfect for breakfast or brunch.

- 1 cup whole milk
- 1 tablespoon dry active yeast
- 2 large eggs (at room temp)
- 1/3 cup unsalted butter (melted)
- 2 teaspoons vanilla extract
- 1/2 cup white granulated sugar
- 1 teaspoon sea salt
- 4 to 4 1/2 cups all-purpose flour
- 1 1/2 cups shelled, roasted pistachios
- 1/2 cup white granulated sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon ground cardamom
- 2/3 cup unsalted butter (softened at room temp)
- 1/4 cup honey
- 1/2 cup water
- 1/4 cup lemon juice
- 2 large egg yolks + 2 tablespoons water (for egg wash)
- 1/3 cup finely diced pistachios (for garnish)
Instructions
- Warm the whole milk until just warm to the touch, pour it into a large bowl, and sprinkle the yeast on top. Let it sit for about 5 minutes until frothy.
- Add the eggs, melted butter, vanilla extract, sugar, and sea salt, and mix until combined.
- Sift in the all-purpose flour, starting with 4 cups and stirring until the dough pulls away from the sides. Add more flour if needed.
- Knead the dough on a floured surface for 6-8 minutes until smooth and elastic.
- In a food processor, blend the pistachios, sugar, cinnamon, and cardamom until finely chopped.
- Spread the softened butter over the rolled-out dough and sprinkle the pistachio mixture evenly over it.
- Roll the dough tightly from one long side into a log and slice into 12 even pieces.
- Place the rolls, cut side-up, in a greased baking dish and cover with plastic wrap; let rise in a warm place for about 1 hour.
- Preheat the oven to 350°F (175°C) and bake the rolls for 25-30 minutes until golden brown.
- In a small saucepan, combine honey, water, and lemon juice, heating gently until combined. Brush over the warm rolls after baking.
Notes
These rolls can be refrigerated overnight after shaping. Let them sit at room temperature before baking.
