- ¼ cup granulated sugar
- 1 tsp salt
- 2 ¼ tsp active dry yeast
- 1 cup cold unsalted butter, cubed
- ¾ cup cold milk or water
- 1 cup ground pistachios or pistachio paste
- ½ cup powdered sugar
- ¼ cup almond flour
- ¼ cup unsalted butter, softened
- 1 egg, beaten
- 1 tsp vanilla extract
- 2 tbsp crushed pistachios (for topping)
- 2 tbsp honey or simple syrup (optional)
Instructions
- Mix the dough by combining flour, sugar, salt, and yeast; add milk and mix on low until combined.
- Add cold butter gradually until the dough forms a cohesive ball.
- Chill the dough wrapped in plastic wrap for at least one hour.
- Roll the dough into a rectangle and fold into thirds, repeating this two more times with chilling in between.
- Shape the croissants by rolling out the dough again, cutting into triangles, and adding the pistachio filling before rolling.
- Bake preheated at 375°F (190°C) for 20-25 minutes until golden brown.
- Drizzle with honey or syrup after baking for added sweetness.
Notes
Use high-quality pistachios for the best flavor. Ensure butter is cold for flaky layers.
