  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 3 tbsp butter
  • 1 cup heavy cream
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a rolling boil. Add your chosen pasta and stir well to avoid sticking. Cook until al dente, usually a couple of minutes less than the package instructions. Reserve ½ cup of pasta water, then drain.
  2. Sauté the shrimp: In a skillet over medium heat, melt 3 tablespoons of butter. Add in minced garlic and sauté until fragrant, about 30 seconds. Then, add the shrimp, season with salt, pepper, and Italian seasoning, and cook until the shrimp turn pink—approximately 2-3 minutes.
  3. Make the sauce: Pour in heavy cream, stirring over low heat. Add the reserved pasta water slowly until you reach your desired sauce consistency. Squeeze in lemon juice and add zest, mixing well.
  4. Toss it all together: Add the drained pasta to the skillet, tossing everything together to coat. Allow everything to mingle for another minute on low heat, so the flavors meld beautifully.
  5. Serve: Garnish with fresh parsley and serve immediately, perhaps with a sprinkle of Parmesan on top if you desire that extra creamy touch.
