- 2 ripe peaches, diced
- 2 cups watermelon, diced
- 1/4 cup fresh mint, chopped
- 1/4 cup feta cheese, crumbled (optional)
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Prepare the fruits by dicing the peaches and watermelon into bite-sized cubes.
- Herb it up by tossing the diced peaches and watermelon in a large mixing bowl with the chopped mint.
- Sprinkle feta cheese over the fruit and mint mixture if using.
- Squeeze fresh lime juice over the top, then add a pinch of salt and pepper.
- Gently toss the ingredients together with a spatula or large spoon.
- Refrigerate for 30 minutes before serving to let flavors meld.
