- 100 g almond flour
- 100 g powdered sugar
- 70 g egg whites (room temperature)
- 90 g granulated sugar
- Peach or orange gel food coloring (optional)
- 1/2 cup unsalted butter (softened)
- 1 1/2 cups powdered sugar (for filling)
- 1/2 cup peach puree
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Sift the Dry Ingredients: In a bowl, sift almond flour and powdered sugar together twice. Set aside.
- Whip Egg Whites: In a stand mixer, whip egg whites on medium speed until foamy. Gradually add granulated sugar and whip until stiff peaks form.
- Combine Mixtures: Fold the sifted almond flour and powdered sugar into the meringue gently until smooth.
- Prepare to Pipe: Transfer batter into a piping bag with a round tip, and pipe small circles onto parchment-lined baking sheets.
- Rest the Shells: Let piped shells rest for 20-30 minutes until slightly dry.
- Bake: Preheat oven to 300°F (150°C) and bake for 14-16 minutes. Allow to cool completely.
- Make the Filling: Beat softened butter, then gradually add powdered sugar, peach puree, vanilla extract, and salt until fluffy.
- Assemble Macarons: Pipe filling onto one macaron shell and sandwich with another. Repeat.
- Mature the Flavors: Refrigerate assembled macarons in an airtight container for at least 24 hours.
