Ingredients

  • 1 can (14 oz) coconut milk
  • 3 cups low-sodium chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Sauté the aromatics: In a large pot, heat a drizzle of oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until they’re beautiful and fragrant, about 3–4 minutes.
  2. Brown the chicken: Add the diced chicken to the pot. Cook until the pieces are nicely browned and no longer pink, roughly 5–7 minutes.
  3. Mix in the rice and liquids: Stir in the rice, allowing it to toast slightly for a minute or two. Pour in the coconut milk and chicken broth, stirring everything together until combined.
  4. Bring to a boil, then simmer: Increase the heat to bring the pot to a gentle boil. Once boiling, reduce the heat and cover, letting it simmer for about 20 minutes, or until the rice is tender and the chicken is cooked through.
  5. Season to taste: After 20 minutes, check the rice for doneness and season generously with salt and pepper.
  6. Garnish and serve: Ladle the hot rice into bowls, and garnish with fresh cilantro. Enjoy it hot and fresh!

Notes

Customize by swapping chicken for shrimp or tofu for a vegetarian option. For added heat, include a sliced chili pepper while sautéing.
