- 1 lb chicken breast, diced
- 1 cup long-grain rice or jasmine rice
- 1 can (14 oz) coconut milk
- 3 cups low-sodium chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Sauté the aromatics: In a large pot, heat a drizzle of oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until they’re beautiful and fragrant, about 3–4 minutes.
- Brown the chicken: Add the diced chicken to the pot. Cook until the pieces are nicely browned and no longer pink, roughly 5–7 minutes.
- Mix in the rice and liquids: Stir in the rice, allowing it to toast slightly for a minute or two. Pour in the coconut milk and chicken broth, stirring everything together until combined.
- Bring to a boil, then simmer: Increase the heat to bring the pot to a gentle boil. Once boiling, reduce the heat and cover, letting it simmer for about 20 minutes, or until the rice is tender and the chicken is cooked through.
- Season to taste: After 20 minutes, check the rice for doneness and season generously with salt and pepper.
- Garnish and serve: Ladle the hot rice into bowls, and garnish with fresh cilantro. Enjoy it hot and fresh!
Notes
Customize by swapping chicken for shrimp or tofu for a vegetarian option. For added heat, include a sliced chili pepper while sautéing.
