Ingredients

  • 4 chicken thighs or breasts
  • 1 cup of BBQ sauce
  • 1/4 cup of honey
  • 1 cup of chicken broth
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat a drizzle of oil in a large, oven-safe pan over medium heat.
  3. Add the chopped onion and garlic, sautéing until softened and fragrant.
  4. Add the chicken pieces, seasoning generously with salt and pepper; brown on both sides.
  5. Mix BBQ sauce and honey in a bowl until smooth, then pour over the chicken.
  6. Add rice and chicken broth, stirring to combine.
  7. Bring to a simmer, cover, and transfer to the oven for 25-30 minutes.
  8. Check that the chicken is cooked through and rice has absorbed the sauce.
  9. Let rest for a few minutes, then garnish with parsley if desired.
