Ingredients

- 2 cups of rice
- 4 chicken thighs or breasts
- 1 cup of BBQ sauce
- 1/4 cup of honey
- 1 cup of chicken broth
- 1 onion, chopped
- 2 cloves of garlic, minced
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Heat a drizzle of oil in a large, oven-safe pan over medium heat.
- Add the chopped onion and garlic, sautéing until softened and fragrant.
- Add the chicken pieces, seasoning generously with salt and pepper; brown on both sides.
- Mix BBQ sauce and honey in a bowl until smooth, then pour over the chicken.
- Add rice and chicken broth, stirring to combine.
- Bring to a simmer, cover, and transfer to the oven for 25-30 minutes.
- Check that the chicken is cooked through and rice has absorbed the sauce.
- Let rest for a few minutes, then garnish with parsley if desired.
