  • 1/2 cup powdered sugar
  • 12 tablespoons milk (for icing)

Instructions

  1. Combine the flour, sugar, baking powder, and salt in a large bowl, whisking until evenly blended.
  2. Whisk together the milk, egg, and melted butter in a separate bowl until fully incorporated.
  3. Pour the wet ingredients into the dry mixture, stirring until just combined. Avoid over-mixing.
  4. Mix together the brown sugar and cinnamon in a small bowl for the filling.
  5. Preheat your skillet over medium heat. Pour about 1/4 cup of pancake batter into the skillet, then sprinkle a tablespoon of the cinnamon-sugar mixture on top.
  6. Swirl the cinnamon mixture into the pancake batter using a toothpick.
  7. Cook until bubbles form on the surface, then flip the pancake and cook until golden-brown, around 2-3 minutes per side.
  8. Mix the powdered sugar, milk, and vanilla extract until smooth for the icing.
