  • 1 cup shredded Monterey Jack cheese
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the spaghetti: Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Drain and set aside.
  2. Prepare the chicken: In a large skillet, heat olive oil over medium heat. Season chicken with paprika, Italian seasoning, salt, and pepper. Cook for about 5-7 minutes until golden brown and the internal temperature reaches 165°F. Remove the chicken from the skillet and set aside.
  3. Sauté the vegetables: In the same skillet, reduce heat and add butter. Once melted, add the chopped onion and sauté for about 3-4 minutes until softened. Stir in minced garlic and cook for another 30 seconds.
  4. Make the sauce: Pour in the chicken broth and heavy cream, stirring well. Let the sauce simmer for about 5 minutes until thickened.
  5. Combine it all: Return the cooked spaghetti and the chicken to the skillet, tossing together to coat in the sauce.
  6. Melt the cheese: Sprinkle shredded Monterey Jack cheese over the mixture, cover, and let sit for 2-3 minutes until the cheese melts.
  7. Serve and garnish: Remove from heat, garnish with chopped parsley, and serve hot.
