- 12 ounces spaghetti
- 2 boneless, skinless chicken breasts
- 1 cup shredded Monterey Jack cheese
- 1 medium yellow onion, finely chopped
- 3 garlic cloves, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the spaghetti: Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Drain and set aside.
- Prepare the chicken: In a large skillet, heat olive oil over medium heat. Season chicken with paprika, Italian seasoning, salt, and pepper. Cook for about 5-7 minutes until golden brown and the internal temperature reaches 165°F. Remove the chicken from the skillet and set aside.
- Sauté the vegetables: In the same skillet, reduce heat and add butter. Once melted, add the chopped onion and sauté for about 3-4 minutes until softened. Stir in minced garlic and cook for another 30 seconds.
- Make the sauce: Pour in the chicken broth and heavy cream, stirring well. Let the sauce simmer for about 5 minutes until thickened.
- Combine it all: Return the cooked spaghetti and the chicken to the skillet, tossing together to coat in the sauce.
- Melt the cheese: Sprinkle shredded Monterey Jack cheese over the mixture, cover, and let sit for 2-3 minutes until the cheese melts.
- Serve and garnish: Remove from heat, garnish with chopped parsley, and serve hot.

Feel free to customize with other vegetables or cheeses as desired. Can make sauce in advance and reheat before combining.
