  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Spices: paprika and Italian seasoning

Instructions

  1. Cook the spaghetti: Fill a large pot with salted water and bring it to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain it in a colander and set aside.
  2. Prepare the chicken: In a large skillet over medium heat, pour the olive oil. Season the chicken breasts with paprika, Italian seasoning, salt, and pepper. Cook for 5-7 minutes, flipping halfway until golden brown. Remove the chicken from the skillet and set aside to rest.
  3. Sauté the aromatics: In the same skillet, melt the butter. Add the chopped onion and sauté for 3-4 minutes until translucent. Then, add the minced garlic and cook for another 30 seconds, just until fragrant.
  4. Make the sauce: Pour the chicken broth and heavy cream into the skillet. Allow it to simmer for about 5 minutes, thickening slightly under gentle heat. Stir occasionally to combine the flavors.
  5. Combine and serve: Return the cooked chicken and drained spaghetti to the skillet. Gently toss everything until the pasta is evenly coated in the creamy sauce. Sprinkle the Monterey Jack cheese on top, covering the skillet with a lid. Let it cook for an additional 2-3 minutes until the cheese melts beautifully.
  6. Garnish and enjoy: Serve hot, garnished with fresh parsley for a pop of color and freshness.
