Description

Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup strawberry filling (made from fresh strawberries and sugar)
  • Whipped cream or chocolate ganache for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease mini cake pans.
  2. Mix dry ingredients in a large bowl: flour, sugar, cocoa powder, baking powder, and salt.
  3. Cream the softened butter until fluffy (2-3 minutes).
  4. Add eggs, milk, and vanilla extract to the butter mixture and mix until smooth.
  5. Combine the dry mixture into the wet mixture gently to avoid overmixing.
  6. Fill the mini cake pans about 2/3 full.
  7. Bake for 15-18 minutes, testing doneness with a toothpick.
  8. Cool the cakes in the pans for a few minutes and then transfer to wire racks.
  9. Prepare for filling by leveling the tops and hollowing slightly.
  10. Fill with strawberry filling and top with whipped cream or chocolate ganache.
