Ingredients

  • 1 cup fresh blackberries
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 tablespoon gelatin
  • 1 teaspoon vanilla extract
  • 2 egg whites
  • 1/4 cup unsalted butter (melted)
  • 1 cup graham cracker crumbs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the crust by combining crushed graham cracker crumbs with melted butter in a mixing bowl.
  3. Pack the crust mixture into the bottoms of your mini pans.
  4. Whip the heavy cream with sugar and vanilla extract until soft peaks form.
  5. Puree the blackberries until smooth and fold this into the whipped cream.
  6. Dissolve the gelatin in lukewarm water and fold it into the blackberry cream.
  7. Whip the egg whites until stiff peaks form and gently fold into the mixture.
  8. Pour the mousse into the prepared crusts and refrigerate for at least 4 hours.
  9. Serve chilled, garnished with fresh blackberries.
