- 1 cup fresh blackberries
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 tablespoon gelatin
- 1 teaspoon vanilla extract
- 2 egg whites
- 1/4 cup unsalted butter (melted)
- 1 cup graham cracker crumbs
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the crust by combining crushed graham cracker crumbs with melted butter in a mixing bowl.
- Pack the crust mixture into the bottoms of your mini pans.
- Whip the heavy cream with sugar and vanilla extract until soft peaks form.
- Puree the blackberries until smooth and fold this into the whipped cream.
- Dissolve the gelatin in lukewarm water and fold it into the blackberry cream.
- Whip the egg whites until stiff peaks form and gently fold into the mixture.
- Pour the mousse into the prepared crusts and refrigerate for at least 4 hours.
- Serve chilled, garnished with fresh blackberries.
