  • 2 garlic cloves (minced)
  • 1 tbsp lemon juice (fresh)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional for paleo or keto)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • ⅓ cup feta cheese (crumbled; optional for dairy-free)
  • ¼ cup fresh herbs (parsley or dill, chopped)
  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ cucumber (grated, squeezed dry)
  • 1 tbsp lemon juice (fresh)
  • 1 garlic clove (minced)
  • 1 tbsp fresh dill (chopped)
  • Salt & pepper (to taste)

Instructions

  1. Marinate the Steak: In a mixing bowl, combine olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and pepper. Coat the sirloin steak with this marinade. Let it marinate for 30 minutes to 4 hours.
  2. Make the Tzatziki: In another bowl, mix together Greek yogurt, grated cucumber, lemon juice, minced garlic, and fresh dill. Season with salt and pepper to taste, then chill.
  3. Prepare the Vinaigrette: Whisk together olive oil, lemon juice, honey, minced garlic, dried oregano, salt, and pepper until smooth.
  4. Sear the Steak: Heat your skillet over high heat. Sear the marinated steak for 4–5 minutes on each side. Remove and let it rest before slicing.
  5. Assemble the Bowl: In a bowl or plate, layer the cooked grains, sliced steak, and toppings like roasted chickpeas, cherry tomatoes, diced cucumber, red onion, kalamata olives, and feta cheese. Drizzle tzatziki and vinaigrette over the top.
  6. Garnish and Enjoy: Finish with a sprinkle of fresh herbs. Serve immediately.
