  • 2 cups Black Beans, drained and rinsed
  • 1 Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 Jalapeño, diced
  • 1 cup Panko Breadcrumbs
  • 1 tsp Smoked Paprika
  • 1 tsp Cumin
  • 1 cup Mango Puree
  • 1 Habanero Pepper, finely chopped
  • 2 tbsp Brown Sugar
  • 2 tbsp Lime Juice
  • 2 tbsp Cornstarch
  • Oil, for cooking
  • Toasted Buns, for serving

Instructions

  1. Dry the black beans thoroughly with a paper towel, removing excess moisture. Mash two-thirds of the beans using a potato masher or fork, leaving some chunks for texture.
  2. Heat a skillet over medium heat and add oil. Once hot, sauté the onion, garlic, and jalapeño until fragrant, about 3–5 minutes.
  3. Combine the mashed and whole black beans, sautéed aromatics, panko breadcrumbs, smoked paprika, and cumin in a large mixing bowl. Mix well until firm enough to form patties.
  4. Cover the mixture and refrigerate for at least 30 minutes.
  5. In a small saucepan, combine mango puree, habanero, brown sugar, and lime juice. Simmer gently until the mixture thickens.
  6. Gradually whisk in cornstarch mixed with a little cold water, continuing to simmer until it reaches your desired glaze consistency.
  7. Heat oil in your skillet over medium heat. Once hot, carefully place the patties in the pan and sear for 4–5 minutes on each side until golden brown.
  8. Brush the patties with the mango-habanero glaze during the last minute of cooking.
  9. Serve the patties on toasted buns, dressing them with your favorite toppings.
