- 2 cups Black Beans, drained and rinsed
- 1 Onion, finely chopped
- 2 cloves Garlic, minced
- 1 Jalapeño, diced
- 1 cup Panko Breadcrumbs
- 1 tsp Smoked Paprika
- 1 tsp Cumin
- 1 cup Mango Puree
- 1 Habanero Pepper, finely chopped
- 2 tbsp Brown Sugar
- 2 tbsp Lime Juice
- 2 tbsp Cornstarch
- Oil, for cooking
- Toasted Buns, for serving
Instructions
- Dry the black beans thoroughly with a paper towel, removing excess moisture. Mash two-thirds of the beans using a potato masher or fork, leaving some chunks for texture.
- Heat a skillet over medium heat and add oil. Once hot, sauté the onion, garlic, and jalapeño until fragrant, about 3–5 minutes.
- Combine the mashed and whole black beans, sautéed aromatics, panko breadcrumbs, smoked paprika, and cumin in a large mixing bowl. Mix well until firm enough to form patties.
- Cover the mixture and refrigerate for at least 30 minutes.
- In a small saucepan, combine mango puree, habanero, brown sugar, and lime juice. Simmer gently until the mixture thickens.
- Gradually whisk in cornstarch mixed with a little cold water, continuing to simmer until it reaches your desired glaze consistency.
- Heat oil in your skillet over medium heat. Once hot, carefully place the patties in the pan and sear for 4–5 minutes on each side until golden brown.
- Brush the patties with the mango-habanero glaze during the last minute of cooking.
- Serve the patties on toasted buns, dressing them with your favorite toppings.
