- 4 large eggs
- 1 cup spinach, chopped
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup cooked and crumbled bacon or sausage
- Salt and pepper to taste
- Butter or oil for cooking
Instructions
- Crack the eggs into a mixing bowl. Add salt and pepper to taste, then whisk until frothy to incorporate air.
- Heat a non-stick skillet over medium heat. Add a small pat of butter or a drizzle of oil.
- Pour the egg mixture into the skillet and tilt to spread evenly.
- Once the edges start to set, sprinkle the chopped spinach, shredded cheese, and crumbled bacon or sausage on top.
- Cook for an additional 1-2 minutes until the cheese melts and eggs cook through.
- Carefully roll the egg mixture into a log using a spatula.
- Slice into bite-sized pieces and serve warm.
Notes
Best enjoyed fresh, but leftovers can be stored in the fridge for up to 4 days or frozen for up to a month.
