Description

A delightful low-carb breakfast roll-up filled with crispy bacon or sausage, tender spinach, and creamy cheese, all wrapped in perfectly cooked eggs.


Ingredients

  • 4 large eggs
  • 1 cup spinach, chopped
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup cooked and crumbled bacon or sausage
  • Salt and pepper to taste
  • Butter or oil for cooking

Instructions

  1. Crack the eggs into a mixing bowl. Add salt and pepper to taste, then whisk until frothy to incorporate air.
  2. Heat a non-stick skillet over medium heat. Add a small pat of butter or a drizzle of oil.
  3. Pour the egg mixture into the skillet and tilt to spread evenly.
  4. Once the edges start to set, sprinkle the chopped spinach, shredded cheese, and crumbled bacon or sausage on top.
  5. Cook for an additional 1-2 minutes until the cheese melts and eggs cook through.
  6. Carefully roll the egg mixture into a log using a spatula.
