- 9 lasagna noodles
- 2 cups blueberries
- 2 cups lemon curd
- 2 cups mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- Mint leaves for garnish
Instructions
- Cook the lasagna noodles according to package instructions. Once cooked, drain well and let them cool completely.
- In a mixing bowl, whisk together the heavy cream, powdered sugar, and vanilla extract. Beat until soft peaks form.
- In another bowl, blend together mascarpone cheese, lemon curd, and lemon zest until smooth.
- Begin assembling by laying down a layer of lasagna noodles at the bottom of a 9×13 baking dish.
- Spread a layer of the lemon mascarpone mixture over the noodles.
- Sprinkle a layer of blueberries on top.
- Repeat the layers until all ingredients are used, ending with a layer of lemon mascarpone.
- Cover the dish and refrigerate for at least 4 hours or ideally overnight.
- Just before serving, add extra blueberries and mint leaves on top.
Notes
For best results, prepare a day ahead to allow flavors to meld. Make sure noodles are cool before layering.
