- 2 tbsp Mustard
- 4 cups Romaine Lettuce, chopped
- 1 cup Strawberries, sliced
- 1 Avocado, diced
- 1 cup Corn
- 2 tbsp Olive Oil
- Salt, to taste
- Pepper, to taste
Instructions
- Cook the chicken breast: Heat your grill pan or skillet over medium heat. Lightly season the chicken with salt and pepper. Cook for 6-7 minutes on each side until golden brown and cooked through. Let it cool slightly, then slice into thin strips.
- Prepare the dressing: In a mixing bowl, combine honey, mustard, olive oil, salt, and pepper. Whisk until smooth.
- Chop the salad components: While the chicken cools, chop the romaine lettuce and slice the strawberries and avocado.
- Assemble your salad: In a large serving bowl, combine the chopped romaine, sliced strawberries, diced avocado, and corn. Add the sliced chicken.
- Dress and serve: Drizzle the honey mustard dressing over the salad. Toss gently to coat all ingredients and serve immediately.
