- 1/4 cup lime juice (freshly squeezed)

- 2 tablespoons cilantro, chopped
- 1 tablespoon lime juice (for salsa)
Instructions
- Marinate the chicken: In a mixing bowl, whisk together the honey, lime juice, olive oil, salt, and pepper until well combined. Immerse the chicken breasts in this flavorful mixture, ensuring they are inside and out, soaking up every bit of taste. Allow it to marinate for at least 30 minutes.
- Preheat the grill: Aim for medium-high heat to allow a beautiful sear.
- Cook the chicken: Remove the chicken from the marinade and place it onto the hot grill. Cook for about 6 to 7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- Prepare the mango salsa: In another bowl, combine diced mango, chopped red onion, minced jalapeño, cilantro, and lime juice. Mix thoroughly.
- Serve: Plate the chicken and generously spoon the mango salsa over the top. Pair with rice, salad, or tortillas.
Notes
For extra flavor, marinate the chicken overnight. Feel free to substitute mango with peaches or pineapple if out of season.
