- 4 chicken breasts (boneless, skinless)
- 2 tablespoons honey
- 2 limes (juiced)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 mango (diced)
- 1 red bell pepper (diced)
- 1/4 red onion (diced)
- 1/4 cup cilantro (chopped)
- 1 jalapeño (optional, diced)
Instructions
- Marinate the Chicken: Whisk together honey, lime juice, olive oil, garlic powder, salt, and pepper in a mixing bowl. Coat chicken breasts with this mixture and refrigerate for at least 30 minutes (up to 4 hours).
- Preheat the Grill: Preheat your grill to medium-high heat.
- Grill the Chicken: Grill marinated chicken for 6-7 minutes on each side or until it reaches an internal temperature of 165°F.
- Make the Salsa: In a separate bowl, combine diced mango, red bell pepper, red onion, cilantro, and jalapeño. Toss gently and season with salt.
- Serve: Let the chicken rest for a couple of minutes before slicing. Serve topped with mango salsa.
Notes
For extra flavor, marinate the chicken longer and feel free to substitute chicken thighs for a richer taste.
