Description

Fluffy high protein pancakes enriched with oat flour and whey protein for a nutritious breakfast.


Ingredients

Scale
  • 2 scoops Whey Protein Powder
  • 2 tsp Baking Powder
  • ½ tsp Baking Soda
  • ½ cup Buttermilk
  • 2 medium Eggs
  • 1 tsp Vanilla Extract
  • ¾ cup Oat Flour
  • 2 tbsp Butter (for cooking)
  • Toppings: Butter, maple syrup, honey, blueberries, strawberries, yogurt, or peanut butter

Instructions

  1. Whisk the eggs with buttermilk and vanilla extract until smooth.
  2. Combine the whey protein, baking powder, baking soda, and oat flour in another bowl.
  3. Fold the dry mixture into the wet ingredients until just combined.
  4. Melt ½ tablespoon of butter in a pancake pan over medium heat.
  5. Pour about ¼ cup of batter onto the pan for each pancake.
  6. Cook until bubbles emerge on the surface, about 1 minute, then flip and cook until golden brown, about 1 more minute.
  7. Serve warm with your favorite toppings.

Notes

Make-Ahead: Prepare the dry ingredients in advance. Cooked pancakes can be stored refrigerated or frozen.
