- 4 large tortillas
- 2 cups cooked chicken, shredded
- 1 cup bell peppers, sliced
- 1 cup onions, sliced
- 1 cup cream cheese
- 1 cup shredded cheese
- 1 tablespoon fajita seasoning
- Salt and pepper to taste
- Cooking oil for sautéing
Instructions
- Heat a drizzle of cooking oil in a non-stick frying pan over medium heat. Add the sliced onions and bell peppers and sauté until softened, about 5 minutes.
- Sprinkle in shredded chicken, fajita seasoning, salt, and pepper, stirring to combine. Cook for an additional 5 minutes until heated through.
- In a mixing bowl, combine cream cheese with a splash of water and stir until smooth.
- Lay a tortilla flat and spread a layer of the creamy mixture onto it.
- Add a portion of the chicken fajita mixture on top, followed by a sprinkle of shredded cheese.
- Roll the tortilla tightly from one end to the other, tucking in the sides as you go.
- Repeat for the remaining tortillas.
- Grill or bake the burritos in a preheated oven until toasted and the cheese has melted.
- Slice each burrito in half and serve immediately.
Notes
Assemble burritos in advance and store wrapped in foil for later. Freezing them is also an option for a quick meal later.
