Description

Ingredients

  • 4 large tortillas
  • 2 cups cooked chicken, shredded
  • 1 cup bell peppers, sliced
  • 1 cup onions, sliced
  • 1 cup cream cheese
  • 1 cup shredded cheese
  • 1 tablespoon fajita seasoning
  • Salt and pepper to taste
  • Cooking oil for sautéing

Instructions

  1. Heat a drizzle of cooking oil in a non-stick frying pan over medium heat. Add the sliced onions and bell peppers and sauté until softened, about 5 minutes.
  2. Sprinkle in shredded chicken, fajita seasoning, salt, and pepper, stirring to combine. Cook for an additional 5 minutes until heated through.
  3. In a mixing bowl, combine cream cheese with a splash of water and stir until smooth.
  4. Lay a tortilla flat and spread a layer of the creamy mixture onto it.
  5. Add a portion of the chicken fajita mixture on top, followed by a sprinkle of shredded cheese.
  6. Roll the tortilla tightly from one end to the other, tucking in the sides as you go.
  7. Repeat for the remaining tortillas.
  8. Grill or bake the burritos in a preheated oven until toasted and the cheese has melted.
  9. Slice each burrito in half and serve immediately.

Notes

Assemble burritos in advance and store wrapped in foil for later. Freezing them is also an option for a quick meal later.
