Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • Juice of 1 lime
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 2 ears fresh corn or 1½ cups frozen corn
  • 1 tsp olive oil
  • ½ tsp cumin
  • Pinch of cayenne pepper
  • 1 tbsp chopped cilantro
  • 1 cup cherry tomatoes, halved
  • ½ red onion, finely diced
  • 1 bell pepper, chopped
  • 2 cups romaine lettuce or spinach
  • ½ cup plain Greek yogurt
  • Juice of ½ lime
  • 1 tbsp olive oil
  • 1 tsp honey (optional)
  • Salt, pepper, and garlic powder to taste
  • Crumbled cotija or feta cheese
  • Fresh cilantro or parsley & lime wedges for garnish

Instructions

  1. Marinate the chicken: In a mixing bowl, whisk together olive oil, lime juice, chili powder, smoked paprika, minced garlic, and salt and pepper. Add chicken and coat thoroughly, marinate for 20–30 minutes.
  2. Grill the chicken: Preheat the grill over medium-high heat. Cook chicken for 5–6 minutes on each side until cooked through. Rest before slicing.
  3. Prepare the corn: Grill corn brushed with olive oil for 8–10 minutes until charred. Cut kernels from the cob.
  4. Infuse the corn: Toss corn with cumin, cayenne, cilantro, and lime juice.
  5. Make the yogurt dressing: Whisk together Greek yogurt, lime juice, olive oil, honey (if using), and seasoning until smooth.
  6. Assemble the bowls: Divide lettuce, top with sliced chicken, grilled corn mix, cherry tomatoes, diced onion, and bell pepper.
  7. Add dressing, sprinkle cheese, and garnish with herbs and lime wedges.

Notes

For lighter options, substitute chicken with shrimp or tofu. Use fresh corn when in season for better flavor.
