Description

Delicious and nutritious breakfast bars made with rolled oats, nuts, and berries, perfect for a guilt-free start to your day.


Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup chopped almonds
  • 1/4 cup sunflower seeds
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup mixed berries (fresh or frozen)
  • 2 tablespoons chia seeds
  • 1 tablespoon maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8 inch baking pan with parchment paper.
  3. Mix the dry ingredients: rolled oats, chopped almonds, and sunflower seeds in a large bowl.
  4. Combine the wet ingredients: honey, melted coconut oil, vanilla extract, and salt. Stir until well coated.
  5. Press the mixture into the prepared baking pan evenly.
  6. Bake for 15-20 minutes until edges are lightly golden brown.
  7. Cool slightly after removing from the oven.
  8. Prepare the berry topping in a saucepan over medium heat until thickened.
  9. Spread the topping over the baked base evenly.
  10. Cool completely before lifting out and cutting into squares.

Notes

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Can be frozen for longer storage.
