Ingredients

  • 1 pound Flank, Ribeye, or New York Strip
  • 2 medium Zucchini
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 tablespoon Dijon Mustard
  • 1 cup Sour Cream or Greek Yogurt
  • 2 tablespoons Fresh Herbs (Chives or Parsley)
  • 2 cups Cooked Rice or Mashed Potatoes

Instructions

  1. Start by marinating the steak. In a bowl, mix the olive oil, garlic powder, onion powder, and Dijon mustard. Coat the steak generously in this mixture. Allow it to marinate for at least 30 minutes.
  2. While the steak marinates, preheat your grill or grill pan over medium-high heat. Slice the zucchini into thick rounds or long strips, and toss them lightly in olive oil, salt, and pepper for flavor.
  3. Grill the zucchini first. Place the slices on the grill and cook for about 4-5 minutes on each side until charred and tender. Remove and set aside.
  4. Next, grill the steak for about 4-6 minutes on each side for medium-rare. Use a meat thermometer to ensure accuracy; 130°F yields a perfect medium-rare.
  5. Once done, let the steak rest for at least 5 minutes before slicing against the grain into bite-sized pieces.
  6. For the sauce, in a separate bowl, mix the sour cream or Greek yogurt with the fresh herbs, adding salt and pepper to taste.
  7. Finally, assemble your bowls! Start with a base of cooked rice or mashed potatoes, layer on the grilled zucchini, and top generously with sliced steak. Drizzle the creamy herb sauce over the top.
