Instructions

  1. Chop the vegetables: Dice the cucumbers, tomatoes, red onion, and bell pepper into bite-sized pieces.
  2. Combine in a large bowl: Toss the chopped vegetables with the rinsed chickpeas and crumbled feta cheese.
  3. Prepare the dressing: In a separate bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
