Description

Delicious gluten-free patties made with sweet potatoes and red lentils, seasoned with spices for a flavor-packed meal.


Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup red lentils, rinsed
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Salt and pepper to taste
  • 1/2 cup gluten-free breadcrumbs
  • 2 tablespoons olive oil for frying

Instructions

  1. Boil the sweet potatoes: Bring a large pot of water to a boil, then add the cubed sweet potatoes. Cook them for about 15-20 minutes until tender. Drain and set aside to cool before mashing.
  2. Cook the red lentils: In a separate saucepan, bring more water to a boil and add the rinsed lentils. Cook for about 15 minutes until soft, then drain and mash.
  3. Sauté onions and garlic: In a skillet over medium heat, drizzle olive oil and add finely chopped onion and minced garlic. Sauté until the onion turns soft and translucent, about 3-4 minutes.
  4. Combine the mixtures: In a large mixing bowl, combine the mashed sweet potatoes, mashed lentils, and the sautéed onion and garlic. Add cumin, coriander, salt, pepper, and gluten-free breadcrumbs. Mix until well incorporated.
  5. Shape the patties: With your hands, take a generous handful of the mixture and shape it into round, flat patties.
  6. Cook the patties: In the same skillet, add a little more olive oil and heat over medium-high. Place the patties in the skillet, cooking for about 5 minutes on each side or until golden brown.
  7. Serve and enjoy: Serve warm with yogurt sauce or salsa.

Notes

Make the mixture ahead of time and refrigerate for up to 2 days or freeze for up to a month. Can be baked in the oven for a healthier alternative.
