Ingredients

  • 1/4 cup coconut milk
  • 1/4 cup Stevia or another sugar substitute
  • 1 cup Greek yogurt
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the almond flour, cocoa powder, and baking powder in a large mixing bowl.
  3. Combine the eggs, Stevia, Greek yogurt, vanilla extract, and coconut milk in another bowl until creamy.
  4. Add the dry mixture to the wet and mix gently until just combined.
  5. Fold in the berries carefully.
  6. Pour the batter into a greased 8×8 baking dish.
  7. Bake for 25-30 minutes, until a toothpick comes out clean.
  8. Cool for about 10 minutes before slicing.
