- 1/4 cup coconut milk
- 1/4 cup Stevia or another sugar substitute
- 1 cup Greek yogurt
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1/4 cup unsweetened cocoa powder
- 2 tablespoons chia seeds
- 1 teaspoon vanilla extract
- 2 eggs
- 1 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the almond flour, cocoa powder, and baking powder in a large mixing bowl.
- Combine the eggs, Stevia, Greek yogurt, vanilla extract, and coconut milk in another bowl until creamy.
- Add the dry mixture to the wet and mix gently until just combined.
- Fold in the berries carefully.
- Pour the batter into a greased 8×8 baking dish.
- Bake for 25-30 minutes, until a toothpick comes out clean.
- Cool for about 10 minutes before slicing.
Notes
For extra richness, consider adding chopped nuts or a drizzle of nut butter on top before serving.
