Description

A soul-satisfying dish featuring succulent chicken and crispy roasted potatoes, all draped in a buttery garlic sauce and topped with Parmesan cheese.


Ingredients

  • 4 chicken thighs or breasts
  • 4 medium potatoes, chopped
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Melt the butter and add the minced garlic in a large mixing bowl.
  3. Add the chopped potatoes to the bowl and toss them in the garlic butter until thoroughly coated.
  4. Season the chicken with salt, pepper, and Italian seasoning.
  5. Place the chicken in a baking dish and lay the potatoes around it.
  6. Sprinkle the grated Parmesan cheese over everything evenly.
  7. Bake in the oven for 30-35 minutes, or until cooked through.
  8. Remove from the oven and garnish with fresh parsley before serving.

Notes

For a lighter version, use olive oil instead of butter. You can also prepare this dish a day in advance for quicker cooking.
