- 4 chicken thighs or breasts
- 4 medium potatoes, chopped
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Melt the butter and add the minced garlic in a large mixing bowl.
- Add the chopped potatoes to the bowl and toss them in the garlic butter until thoroughly coated.
- Season the chicken with salt, pepper, and Italian seasoning.
- Place the chicken in a baking dish and lay the potatoes around it.
- Sprinkle the grated Parmesan cheese over everything evenly.
- Bake in the oven for 30-35 minutes, or until cooked through.
- Remove from the oven and garnish with fresh parsley before serving.
Notes
For a lighter version, use olive oil instead of butter. You can also prepare this dish a day in advance for quicker cooking.
