Ingredients

  • 3 Tablespoons Vegetable Oil
  • 4 Cloves Garlic, Minced
  • 23 Green Chilies, Finely Chopped
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Chili Sauce
  • 1 Tablespoon Vinegar
  • Salt to Taste
  • Spring Onions for Garnish

Instructions

  1. Cook the Noodles in a large pot of salted water according to package instructions, drain, and set aside without rinsing.
  2. Heat the oil in a non-stick skillet or wok over medium heat until shimmering.
  3. Sauté the minced garlic and chopped chilies for 1-2 minutes until fragrant.
  4. Combine the cooked noodles, soy sauce, chili sauce, vinegar, and a pinch of salt, stirring gently.
  5. Mix everything together until well coated.
  6. Garnish with finely chopped spring onions and serve hot.

Notes

For a gluten-free option, substitute regular noodles with rice noodles. Adjust spice level according to preference.
