- 4 Garlic Cloves, minced
- 4 Fresh Rosemary Sprigs, chopped

Instructions
- Preheat your oven to a low temperature, around 275°F (135°C).
- Season the lamb shoulder generously with minced garlic, chopped rosemary, olive oil, and sea salt.
- Place the seasoned lamb in a roasting pan and cover it with aluminum foil.
- Roast the lamb for about 4-6 hours, keeping the foil on to lock in moisture.
- Add your choice of vegetables in the final hour of cooking.
- Rest the lamb for 15-20 minutes before serving.
Notes
Marinate the lamb overnight for richer flavors. Avoid cutting into the lamb too soon after roasting.
