  • 4 Garlic Cloves, minced
  • 4 Fresh Rosemary Sprigs, chopped
  • ¼ cup Olive Oil
  • 1 tablespoon Sea Salt
  • Vegetables for Roasting (Carrots, Potatoes, Onions)
  • Flatbread (optional)

Instructions

  1. Preheat your oven to a low temperature, around 275°F (135°C).
  2. Season the lamb shoulder generously with minced garlic, chopped rosemary, olive oil, and sea salt.
  3. Place the seasoned lamb in a roasting pan and cover it with aluminum foil.
  4. Roast the lamb for about 4-6 hours, keeping the foil on to lock in moisture.
  5. Add your choice of vegetables in the final hour of cooking.
  6. Rest the lamb for 15-20 minutes before serving.

Notes

Marinate the lamb overnight for richer flavors. Avoid cutting into the lamb too soon after roasting.
