Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup mushrooms, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Olive oil, for cooking
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté mushrooms and garlic in a skillet with olive oil over medium heat until softened and fragrant.
  3. Prepare the stuffing by combining sautéed mushrooms, cream cheese, breadcrumbs, Parmesan, salt, and pepper in a mixing bowl.
  4. Prepare the chicken by cutting a horizontal pocket into each breast and stuffing with the mixture.
  5. Season the outside of each stuffed chicken breast with salt and pepper.
  6. Sear the chicken in the skillet on both sides for 3-4 minutes until golden brown.
  7. Bake in the oven for 20-25 minutes until the internal temperature reaches 165°F (75°C).
  8. Garnish with fresh parsley and serve.

Notes

For make-ahead tips, prepare the mushroom stuffing a day in advance. You can use an air fryer for a crispy finish, adjusting cooking time to 15-20 minutes.
