- 4 boneless, skinless chicken breasts
- 1 cup mushrooms, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Olive oil, for cooking
- Fresh parsley, for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Sauté mushrooms and garlic in a skillet with olive oil over medium heat until softened and fragrant.
- Prepare the stuffing by combining sautéed mushrooms, cream cheese, breadcrumbs, Parmesan, salt, and pepper in a mixing bowl.
- Prepare the chicken by cutting a horizontal pocket into each breast and stuffing with the mixture.
- Season the outside of each stuffed chicken breast with salt and pepper.
- Sear the chicken in the skillet on both sides for 3-4 minutes until golden brown.
- Bake in the oven for 20-25 minutes until the internal temperature reaches 165°F (75°C).
- Garnish with fresh parsley and serve.
Notes
For make-ahead tips, prepare the mushroom stuffing a day in advance. You can use an air fryer for a crispy finish, adjusting cooking time to 15-20 minutes.
