- 2 cups warm cooked sushi rice
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- Salt & sugar to taste
- 3 tablespoons soy sauce
- 1 tablespoon honey
- 3 cloves minced garlic
- 1 teaspoon grated ginger
- 1/2 teaspoon chili flakes
- 1 pound shrimp
- 2 tablespoons toasted sesame seeds
- 2 tablespoons sliced green onions (optional)
- Teriyaki sauce or spicy mayo to taste
Instructions
- Prepare the rice by cooking sushi rice according to package instructions. Fluff and mix in rice vinegar, sesame oil, salt, and sugar. Let it cool.
- Season the shrimp by whisking soy sauce, honey, minced garlic, grated ginger, and chili flakes in a bowl. Toss shrimp in marinade.
- Cook the shrimp in a skillet with sesame oil over medium-high heat for 2-3 minutes on each side until pink and golden brown.
- Assemble the stacks in a small bowl, layering rice first and topping with shrimp. Garnish with sesame seeds and green onions.
- Drizzle with teriyaki sauce or spicy mayo and enjoy!

Ensure shrimp are not overcrowded during cooking for the best sear. Prepare the rice in advance for easier assembly.
