Ingredients

  • 2 cups warm cooked sushi rice
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • Salt & sugar to taste
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 3 cloves minced garlic
  • 1 teaspoon grated ginger
  • 1/2 teaspoon chili flakes
  • 1 pound shrimp
  • 2 tablespoons toasted sesame seeds
  • 2 tablespoons sliced green onions (optional)
  • Teriyaki sauce or spicy mayo to taste

Instructions

  1. Prepare the rice by cooking sushi rice according to package instructions. Fluff and mix in rice vinegar, sesame oil, salt, and sugar. Let it cool.
  2. Season the shrimp by whisking soy sauce, honey, minced garlic, grated ginger, and chili flakes in a bowl. Toss shrimp in marinade.
  3. Cook the shrimp in a skillet with sesame oil over medium-high heat for 2-3 minutes on each side until pink and golden brown.
  4. Assemble the stacks in a small bowl, layering rice first and topping with shrimp. Garnish with sesame seeds and green onions.
  5. Drizzle with teriyaki sauce or spicy mayo and enjoy!

Notes
