Description

Ingredients

  • 1 lb chicken thighs (boneless and skinless)
  • 1 cup long-grain rice (Basmati or jasmine)
  • 2 cups chicken broth
  • 1 onion, diced
  • 2 carrots, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chicken thighs to the pot and sear until golden brown on both sides.
  3. Remove the chicken from the pot and set aside.
  4. Toss in the diced onions, carrots, and bell pepper, and sauté for about 5 minutes.
  5. Introduce the minced garlic and cook for an additional minute.
  6. Pour in the rice, chicken broth, paprika, salt, and pepper, and stir gently.
  7. Nestle the browned chicken on top of the rice mixture and cover the pot.
  8. Reduce heat to low and cook for about 20 minutes.
  9. Fluff the rice with a fork once cooked through.
  10. Garnish with fresh parsley before serving.
