Ingredients

- 1 lb chicken thighs (boneless and skinless)
- 1 cup long-grain rice (Basmati or jasmine)
- 2 cups chicken broth
- 1 onion, diced
- 2 carrots, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chicken thighs to the pot and sear until golden brown on both sides.
- Remove the chicken from the pot and set aside.
- Toss in the diced onions, carrots, and bell pepper, and sauté for about 5 minutes.
- Introduce the minced garlic and cook for an additional minute.
- Pour in the rice, chicken broth, paprika, salt, and pepper, and stir gently.
- Nestle the browned chicken on top of the rice mixture and cover the pot.
- Reduce heat to low and cook for about 20 minutes.
- Fluff the rice with a fork once cooked through.
- Garnish with fresh parsley before serving.
