Description

A vibrant salad featuring mixed berries, creamy avocado, and tangy goat cheese, all tossed with a zesty dressing.


Ingredients

  • 8 to 10 cups mixed spring greens (or arugula)
  • 1 bundle fresh mint leaves & 10 to 12 basil leaves
  • 4 medium Persian cucumbers
  • 1 large avocado
  • 1 1/2 cups sliced strawberries
  • 1 1/2 cups blueberries
  • 1 cup raspberries
  • 1/3 cup goat cheese (or feta cheese)
  • 1/4 cup sliced almonds
  • Dressing: 2 tbsp lemon juice, 1 tbsp balsamic vinegar, 1 1/2 tbsp honey (or agave syrup), 1/4 cup extra virgin olive oil, 1/2 tsp salt, 2 tsp poppy seeds
  • Optional: 2 large grilled chicken breasts (approximately 1 pound)

Instructions

  1. Rinse and dry the spring greens, arranging them in a large mixing bowl.
  2. Slice the cucumbers thinly.
  3. Chop the avocado into bite-sized pieces.
  4. Prepare the herbs, finely slicing the mint and basil.
  5. Rinse the berries gently, pat them dry, and slice the strawberries.
  6. In a small bowl, whisk together the lemon juice, balsamic vinegar, honey, extra virgin olive oil, salt, and poppy seeds.
  7. Taste and adjust flavors if needed.
  8. In the bowl with the greens, sprinkle the herbs, cucumber, avocado, and berries.
  9. Drizzle the dressing generously over the salad.
  10. Toss gently until everything is beautifully coated.
  11. If adding chicken, season and grill until cooked through, then slice and lay atop your salad.

Notes

Make-ahead tips: Prep ingredients and store separately until serving. Avoid overdressing and use ripe berries for best flavor.
