A comforting and creamy chicken casserole perfect for low-carb diets.


Ingredients

  • 2 cups Cooked Chicken, shredded (rotisserie or leftovers)
  • 8 oz Cream Cheese
  • 1 cup Cheddar Cheese, shredded (divided)
  • 1 cup Broccoli, chopped
  • 1 cup Cauliflower, chopped
  • 1 Onion, chopped
  • 2 cloves Garlic, minced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté onions and garlic in oil until fragrant, about 3-4 minutes.
  3. Mix chicken, sautéed onion and garlic, broccoli, and cauliflower in a large bowl.
  4. Blend in cream cheese until smooth.
  5. Fold in half of the shredded cheddar.
  6. Transfer the mixture to a greased 9×13-inch baking dish.
  7. Top with remaining cheddar cheese.
  8. Bake for 30-35 minutes, until bubbly and golden brown.
  9. Serve warm with a side salad.

Notes
